As part of preparing for the arrival of our little bundle of joy, I knew I wanted to have several meals on-hand. Over time, I decided I didn't just want dinner meals readily available, but also breakfast (since I have a hungry toddler to feed in the mornings :)).
Once again, THRIVE Life has helped me! And I can't say how much I love how versatile the product is. It has helped me in so many ways with shaving time off meal prep, reducing waste, and offering my family healthier options (and easy ways to get veggies!). And now it's helped me prepare for a baby! So loving it!
So now I have dinners and breakfasts, all thanks to THRIVE Life!
Here's what I now have on hand (in addition to several freezer meals that THRIVE also helped me with!):
Oatmeals (this is the basic recipe I followed, but changed up the fruit and some of the spices for some of them!)
Sausage Zuppa Toscana
Sloppy Joes (I haven't posted this as a jar meal specifically, yet, but plan to eventually. The recipe is there, though, and I'll just add a can of tomato sauce since I don't have tomato powder on hand at the moment!)
I know it'll be so wonderful to have these on-hand when we have a newborn and sleep is hard to come by -- and time is a little crazy for a while :). I love THRIVE, and I love my home store!

Jar Meal: Apple Pie Oatmeal
This Thursday I am doing a Make and Take Jar Meal class for my sweet friend Megan! She's so awesome and she's so excited about THRIVE Life that she wants all her guests to have some THRIVE Life deliciousness to take home and enjoy -- hence the Apple Pie Oatmeal in a jar for every party guest :)!
So this morning, my toddler and I tried it out! And it is amazing! My toddler asked for "more...more!" And, considering she usually leaves her store-bought cereals to soak up milk and go soggy and go to waste, I was totally impressed that she at all of her oatmeal and wanted more!
Being that I'm only 3 weeks away from my due date, I am definitely planning on making variations of this recipe to keep in my cabinet for easy to fix breakfasts after we have a new little bundle in our home (and I have less sleep in my body :)). Definitely going to try doing it with bananas and cinnamon; strawberries and vanilla powder; peaches, etc.! So versatile!
APPLE PIE OATMEAL
1 cup THRIVE Quick Oats
2 tablespoons THRIVE Instant Milk
1/4 cup brown sugar*
1/2 cup THRIVE Granny Smith Apples, crushed/broken (about 5 to 6 apple slices)
2 teaspoons Apple Pie Spice
For the jar: Layer ingredients in a pint-size jar, beginning with oats.
To prepare in microwave: Place contents of jar in microwave-safe bowl (a larger one) and add 1 2/3 cups water. Microwave on high 2 to 2 1/2 minutes in 30 second intervals, stirring after each interval. Add more water slowly to reach desired consistency. Add milk as necessary to thin/cool after oatmeal is cooked.
To prepare on stove top: Add contents of jar to 1 3/4 cups water and bring to a boil. Reduce heat and simmer 10 minutes, adding water as necessary. Add milk as necessary to thin/cool after oatmeal is cooked.

This is 2 servings in the pint-size jar; but you can half the recipe (in a jelly jar) and have single-serve breakfasts! Which would be totally awesome to take to work with you -- or send with your husband ;)!
I may have used too small of a bowl in the microwave... And I may have had a little mess to clean up! But it was so worth it!

Sausage and Pepper Brunch Pizza
Earlier this year, I had a Pampered Chef party at my house. As a result, I was able to score one of their new items for free! It's this huge round baking stone that has handles and a little lip so that you can make things like quiches in it. And I love it!
As part of the party, we made a recipe for Sausage and Pepper Brunch Pizza using the stone. And I realized I could totally THRIVE-alize that recipe! So I did! And we had it for dinner the other night :). (It was a brinner kind of evening that day...).
It was awesome having many of the ingredients on-hand, thanks to THRIVE Life! And even more awesome that I could avoid handling raw sausage and raw eggs and the time (and mess) it would otherwise take to brown the sausage!!! There is a reason THRIVE Sausage Crumbles are one of the most popular items THRIVE Life has to offer!!!
Below is the recipe as I made it. But it is originally a Pampered Chef recipe and can be found here.
SAUSAGE AND PEPPER BRUNCH PIZZA
1 cup THRIVE Sausage Crumbles
3/4 cup THRIVE Red Bell Peppers (broken in smaller pieces)
1 tablespoon basil*
4 ounces Neufachtel cheese (1/3 of the fat of cream cheese option), softened
6 THRIVE Whole Eggs (6 tablespoons egg powder + 3/4 cup water)
1 16-ounce package refrigerated flaky biscuits (grands size)
4 ounces provolone cheese, shredded
black pepper to taste
Preheat oven to 400 degrees. Place sausage crumbles and red bell pepper in a bowl. Cover with boiling water and allow to sit and reconstitute. Drain off excess water (after 5 to 10 minutes).
Separate the flaky biscuits in half so that you have 16 biscuits. Lay overlapping on round dish and roll or press to cover entire dish (I used a Pampered Chef round baking stone). Make sure all seems are sealed. Press some up the sides a bit.
In a microwave-safe bowl, microwave cream cheese 10 to 15 seconds until very soft and stir-able. Whisk until smooth. Add eggs, alternating powder and water, whisking to blend well after each addition.
Sprinkle half the cheese over the biscuits. Then sprinkle with the sausage/pepper mixture. Sprinkle with basil. Carefully pour egg and cheese mixture over all. Sprinkle black pepper on top to taste. Bake in preheated oven 15 to 17 minutes. Serve immediately.
Definitely delicious! Definitely easy! Love having THRIVE on hand to help me with my meals :)!!

Raspberry-Peach Rolls with a Simply Peach Glaze
So I'd had thoughts of this recipe brewing in my head for some time. And since I took advantage of the Big Deal Sale we had this month, I finally got my THRIVE Peaches to make it happen! I had reservations, as this fell under the category of "Hila experimenting in the kitchen" and I'm still a tad new at the whole experimentation game (I do love to follow a recipe!). But after talking over my idea with my husband and getting his advice... I decided it was worth a try. And unless it turned out like charcoal, we'd be eating it! Can't let those delicious THRIVE Peaches and THRIVE Raspberries go to waste!
Good news! It wasn't charcoal! Even better news: It was a total success! My husband had 3 big ones. And is now down for a morning nap ;).
I'll do a step-by-step with pictures at the bottom, but sometimes I know people just want the recipe and I usually hate scrolling through the long version when I'm looking at other people's recipes ;). So here is the recipe (I am not responsible for making up the dough recipe, though I did THRIVE-alize it a bit. The original dough recipe can be found here. But I did develop the "innards" of this ;)).
RASPBERRY-PEACH ROLLS with a SIMPLY PEACH GLAZE
Dough:
1 cup THRIVE Instant Milk (prepared)
1/3 cup butter
2 1/4 teaspoons active dry yeast
1/2 cup white sugar*
4 1/2 cups all-purpose flour* (plus more for kneading)
1 teaspoon salt*
3 THRIVE Whole Eggs (3 tablespoons egg powder + 6 tablespoons water)
Filling:
2 cups THRIVE Peaches
1/4 cup THRIVE Raspberries
1/3 cup white sugar*
Glaze:
1 cup THRIVE Powdered Sugar
2 tablespoons THRIVE Simply Peach drink mix
3 tablespoons THRIVE Instant Milk (prepared)
For the dough: Heat milk in a small saucepan over medium heat until it barely bubbles. Remove from heat and melt butter in milk. Allow to cool until lukewarm. Pour into large mixing bowl and add yeast. Mix and allow yeast to dissolve in milk and butter mixture. Add sugar, 3 cups of flour, salt, and eggs. Mix until well-blended. Add remaining flour 1/2 cup at a time until the dough pulls into a ball. Turn dough out on floured surface and knead until smooth and supple, adding flour as necessary (this was about another 1/4 cup or so for me). Oil a large bowl and put dough into bowl, turning to coat with oil. Cover with a damp towel and allow to rise until doubled in size (anywhere from 1 to 2 hours, depending on temperatures). Turn dough out onto a clean, dry surface and roll dough out to approximately 11x14-inch rectangle.
For the filling: Place peaches and raspberries in a blender or food processor and process until powdered. Pour into a small bowl and add 1/3 cup sugar. Stir to mix all ingredients together.
For the glaze (I recommend making this while the rolls are cooking): Add all ingredients (powdered sugar, Simply Peach, and prepared milk) together in a bowl and whisk until a glaze forms. Set aside until rolls are done baking.
For the rolls: Sprinkle filling evenly all over rolled-out dough, leaving a 1/2" bare at one "short" edge of the dough. Brush that bare strip with water. Beginning with the other short edge, roll tightly all the way and then pinch seams at the wet dough end. Cut into 12 equal parts (I do this using string or floss, as it prevents flattening) and place into a greased 9x13 pan. Cover with plastic wrap and refrigerate overnight. In the morning, take rolls out of the refrigerator and allow to set for 30 to 45 minutes (making sure rolls have doubled in size... You may have to let them sit out longer -- but not too long! Ours were out a little too long ;), hence the popping out rolls!). Preheat oven to 375. Bake loosely covered with foil for 15 minutes. Remove foil and bake an additional 5 to 10 minutes or until rolls are done. Drizzle with glaze while still hot.

One thing I learned is that I'll probably add a little water to the Simply Peach drink mix in a saucepan in the future to melt the sugar crystals in the drink mix. The glaze was a little grainy from the sugar that didn't melt as I made it above. So it was just a little learning thing for me ;). Still tasty, though! And a delicious treat for a lazy Saturday morning!

Oatmeal Peanut Butter Chocolate Chip Pancakes
Our family loves pancakes. We have them for breakfast at least once a week. But sometimes 2 or 3 times a week! We keep a variety of pancake mixes on hand, just for this reason. We definitely love the THRIVE 10 Grain Pancake Mix, and we are super-excited about the changes that have been made to it, so it is now among the many non-GMO products THRIVE Life offers!
And it's on special this month! The perfect time to stock up!
But that isn't actually the pancake mix I used today. Today I used a regular store-bought mix and jazzed it up -- a lot! It wasn't a special celebratory day or anything. I just felt like trying out some fancy "special" pancakes with the new -- and completely amazing THRIVE Peanut Flour. I realize I've been posting a lot of recipes recently with the Peanut Flour, but that's because I am simply amazed by the versatility of it; not to mention how easy it is to use and clean!
I would have never thought to add peanut butter to my pancake mix without this great product. I got the idea, because many people enjoy peanut butter spread on their pancakes. So I thought, "Why not step it up and put peanut flour in the pancakes!?!" And it was so easy to do! I just tossed some in with my other dry ingredients, and oila!
And these were yummy. So yummy, I didn't even use syrup. And my toddler snarfed all of hers down. Quickly.
OATMEAL PEANUT BUTTER CHOCOLATE CHIP PANCAKES
2 cups all-inclusive pancake mix*(we used Krusteaz brand)
3/4 cups oats* (I used old-fashioned, but quick would work fine too!)
2 tablespoons THRIVE Peanut Flour
1 1/2 cups water
1/4 to 1/2 cups mini chocolate chips (this depends on how many chocolate chips you want!)
Add all dry ingredients, except chocolate chips, to a medium-size bowl and whisk together to combine. Add water and whisk until well-blended. Mix in chocolate chips. Pour batter onto prepared skillet or griddle and cook according to pancake mix directions (or to your preferences ;)).
When I make pancakes, they are usually 6 to 7-inches in diameter. This recipe yielded 5 pancakes that size.
I'm definitely making these again! So easy, and so yummy!
The Peanut Flour is also on special this month! It is a perfect time to get some! Through April, it is $15.09 for a #10 can, which will make a little more than 11 1/4 cups of fresh peanut butter however you like it (you control the salt, sugar, and oil!). And just for comparison purposes, 2 large jars of JIF peanut butter from Costco are 10 3/4 cups of prepared peanut butter without the ability to control the sugar, salt, and oil (fat) content! I can't remember the cost of the peanut butter at Costco right off hand, but I'll make a mental note to check on Tuesday and post it! But the 5 year unopened shelf life on this peanut flour is a great thing, because it's a lot longer than store-bought peanut butter!!

I can't remember the cost of the peanut butter at Costco right off hand, but I'll make a mental note to check on Tuesday and post it! But the 5 year unopened shelf life on this peanut flour is a great thing, because it's a lot longer than store-bought peanut butter!!

Raspberry Sauce/Filling
Yesterday I had some extra kiddos coming over early in the morning. One of them is only 8 months old, so he wasn't going to be caring too much about pancakes for breakfast... But the other is 4, and then my toddler is almost 2. So I figured I'd make a "special" breakfast. Particularly because my husband likes to tease me about my cast iron pancake puff pan (the as seen on TV! one) that I have used only a very few times, yet continue to move around with me from home to home. Well, here's the thing: my dad got it for me many years ago, because he thought I would like it. I'm kind of a sentimental person, so I hold on to things like that. Plus, it is super cute! And I just know my kiddos will appreciate the fun of having pancake puffs in the years ahead.
But I decided it was a good time to make pancake puffs, since I'd have an older kid over at breakfast time. And then I started thinking about how much fun it would be to actually fill the puffs (the pan comes with gadgets to help you add pizazz! And one of those gadgets is a syringe type thing) with something yummy! And I thought of my THRIVE Raspberries, and the recipe on the #10 can of THRIVE Raspberries for Raspberry Sauce. So I decided to give it a try!
I will confess straight up that this did not go entirely as I hoped. I was playing around with the recipe on kind-of short notice. I decided to cut back on the water in the original recipe to hopefully make a thicker sauce which would do the trick. Well, it really didn't quite. It wasn't gel-like enough. Which means I have learned I need to do some more research. However, it was still a really fun experience, and the sauce just soaked into the pancake puffs and still made them delicious anyway! So I'm still posting this and then I will hone the technique and post again when I've had 100% success!
I started out by making my pancake puffs with my THRIVE 10-Grain Pancake Mix (which was just pancake mix and water). We love this stuff! I also made up a few regular pancakes with the batter, since it wasn't vital that I have puffs ;).
While making the pancakes, I started the Raspberry filling. Here is the way I did it (which was basically cut the original recipe in half, except I significantly decreased the water):
RASPBERRY SAUCE/FILLING
1 cups THRIVE Raspberries
3/4 cup water
2 tablespoons white sugar*
1/2 tablespoon honey*
1/2 teaspoon THRIVE Pure Vanilla Powder
1/8 teaspoon salt*
3/4 teaspoon lemon juice
Boil all ingredients in a saucepan until slightly thickened and syrupy (only I was trying to get it very thick, so I boiled longer). Place sauce in a strainer over a bowl and push through, leaving only the seeds in the strainer. Discard seeds. Cover and refrigerate sauce before serving over desserts. (Well, I actually used mine right away, which probably didn't help the lack of thickness! Also, I didn't spend a lot of time on the straining. I got a lot of sauce out for injecting into the puffs, but left the rest in the strainer with the seeds, and then spread it on my pancakes -- still yummy!)
I tried to get a close-up of the puffs so you could see the filling/sauce squeezing out a bit ;).

Easy Fruit Salad
One of the things I love most about having my home store through THRIVE Life is the fact that I have a home store! Does that sound redundant? Probably. But there have been many times when I've had the automatic thought, "Oh that recipe sounds good, but I don't have x ingredient."
But then I remember my home store -- and I realize I do have that ingredient after all!!!
I had one such experience the other day. I had made a breakfast casserole for dinner, but felt like I wanted something else to go along with it -- otherwise the plate would look kind of bare! I had recently purchased some fresh strawberries which needed to be used up, plus I had bananas and red grapes (also in need of being used). So I thought of the fruit salad I make for every large family gathering we attend. It's such a simple recipe, and it's so delicious! This time I would just have fewer fruits in it than usual, and no big deal...
Then I remembered I had some extra fruits after all! I could add my THRIVE Raspberries! And that's just what I did! I just threw them in dry and let them get all soggy from the yogurt! I've done this multiple times with yogurt parfaits, and I love how they turn out when they are allowed to sit and soak up the yogurt! Saves time, too, since all my THRIVE foods are washed and ready for me to use!
So here's the recipe I made the other day. It's very simple, and we always get a lot of compliments about it. I'm actually pretty excited to try this with more THRIVE fruits in the future and see how it turns out, because I could actually make this fruit salad with all THRIVE ingredients, and I think that's pretty awesome!

1 large banana, sliced*
1 cup red grapes, rinsed and dried*
5-6 ripe strawberries, rinsed, dried, sliced*
1 cup THRIVE Raspberries
1 cup strawberry yogurt* (or yogurt flavor of your choice)
Mix all ingredients in a large bowl. Allow to chill for 1/2 hour and serve!

"Frankenmuffins"
As I've mentioned before, I'm always looking for new yummy ways to get vegetables into myself and my toddler! I recently came across this recipe for "Frankenmuffins" in a Family Fun magazine my friend Lea gave me. I knew I wanted to try it out (even if it isn't quite Halloween-time yet ;)), and THRIVE gave me the incentive to do so one day when I realized I had all the ingredients necessary -- thanks to THRIVE Chopped Spinach! So I tweaked the original recipe a bit, as the original called for fresh baby spinach, and I figured I wouldn't need as much spinach while using my THRIVE. Below is the recipe as I made them.
FRANKENMUFFINS
1 cup white flour*
1 cup whole wheat flour*
3/4 cup sugar*
2 teaspoons baking powder*
1/2 teaspoon baking soda
1/2 teaspoon salt*
1 1/2 teaspoons cinnamon
1/4 cup canola oil
3/4 cup milk*
3 cups THRIVE Chopped Spinach, rehydrated
1 large ripe banana
2 teaspoons THRIVE Pure Vanilla Powder
Preheat oven to 350. Spray 16 muffin cups with cooking spray. In a large bowl, combine first 7 ingredients and stir with a mix until well combined.
In a blender, add the oil, milk, and spinach. Puree until smooth. Add banana and vanilla and blend until all is well combined. Add wet ingredients to dry and stir until completely mixed (I used my stand mixer).
Fill each prepared muffin well two-thirds full. Bake the muffins until a toothpick inserted in the center comes out clean, about 18 minutes (mine took 17).

I seriously cannot say enough good things about these muffins! They are delicious! And they freeze amazingly well. We will be making another batch of them tomorrow, because we ran out! My toddler and I love to eat them as a snack, but I think they could even be used as breakfast. And I just love that I'm getting extra veggies into both of us in a delicious way! And I really love using my THRIVE Spinach in this recipe. It's so super-easy to just scoop my spinach into the blender and add the liquids and blend!

Granola
The other day, I saw my THRIVE Honey Crystals sitting amongst my home store, and I thought to myself, "I need to make some granola!" And so I did :). This is seriously a delicious granola recipe. I pretty much kept snagging handfuls while it was supposed to be cooling. I also enjoyed some as cereal this morning before my ultrasound. Delicious!
I followed this recipe, generally. But I made a few changes. I will post my recipe below as I made it (with alterations).
HOME-MADE GRANOLA
4 cups oats*
1/2 cup coconut
1/2 cup sliced almonds
3/4 teaspoon salt*
1/4 cup brown sugar*
1/2 cup THRIVE Butter Powder
1/2 tablespoon cinnamon
1/2 tablespoon THRIVE Pure Vanilla Extract Powder
3/4 cup THRIVE Honey Crystals
2/3 cup water
In a large bowl, combine first 3 ingredients. Set aside. Preheat oven to 350.
In a small saucepan, add remaining ingredients and stir. Bring to a boil, then reduce and simmer 2 to 3 minutes or until honey mixture is thickened.
Pour honey mixture over dry ingredients and stir until well combined. Pour onto greased cookie sheet. Bake 15 minutes or until lightly browned, removing to stir 2 to 3 times during cooking for even browning. Allow to cool completely.

Sweet Potato Muffins
At the end of September, I had the opportunity to visit my brother-in-law and sister-in-law and do a mini-THRIVE "party" for my mother-in-law at a Stampin' Up get together! It was a fun evening, and I enjoyed learning more about crafting -- and getting big a little by the card-making bug! If you're into card-making, you should check out Stampin' Up here. I flipped through the catalog and found so many things I wanted! They were so stinkin' cute! Being that I'm not super-crafty, my sister-in-law (who is incredibly patient -- she reminds me of my mom with how patient she is!) "held my hand" and helped me make the cutest "pop-up" card. Which I was able to use as part of a house-warming gift just this past weekend. So fun!
Anyway, I was also able to meet several awesome ladies and learn a little bit about them. One sweet lady was particularly interested in how THRIVE Life Foods can help her eat healthier while on the road. She drives a truck with her husband, and she said it can sometimes be challenging to eat well when their refrigerated space is quite limited and they are on the road for weeks -- and sometimes months -- at a time! I am always excited when someone finds a way THRIVE Life can benefit their life's circumstances in new ways I'd never thought of before!
I wanted to be able to share some of the deliciousness that can be accomplished with THRIVE Life foods, so I made Sweet Potato Muffins! I found the recipe on the back of the #10 can of THRIVE Sweet Potatoes, but it can also be found on the THRIVE Life recipe site. I adapted it a bit to fit what I had.
SWEET POTATO MUFFINS
1/2 cup THRIVE Sweet Potatoes
1 1/4 cup water, boiling
1/4 cup apple juice
2 tablespoons THRIVE Instant Milk
1/4 cup THRIVE Shortening Powder
2 tablespoons THRIVE Whole Egg Powder
1/2 cup THRIVE Honey Crystals
1 1/4 cup all-purpose flour*
1/2 tablespoons baking powder*
1/4 teaspoon salt*
1 1/2 teaspoon cinnamon
1/3 cup THRIVE Powdered Butter
1/2 cup butterscotch chips
Soak sweet potatoes in boiling water until soft (about 10 minutes). Do not drain water. Add potato mixture to blender and puree with apple juice.
In a separate bowl, mix dry ingredients together. Add puree mixture and blend until almost mixed. Add in butterscotch chips and mix until barely incorporated. Spoon mixture into prepared muffin tin.
Bake at 400 degrees for 18 to 20 minutes. Makes 16 muffins.

These were so yummy! And they were a hit at the party :). In fact, my sister-in-law may have temporarily broken her diet for them... ;).

Cooking with the Q-Pon!: 10 Grain Pancake Mix: Sausage Cheese PopUms
THRIVE Life 10 Grain Pancake Mix isn't just for awesomely delicious and healthy pancakes! I recently used them in Sausage Cheese PopUms -- and were they ever yum!
This recipe can be used as an appetizer, a snack, a lunch, a brunch, and even a breakfast! Very versatile!!!
I also loved how fast these came together! I spent 10 minutes hands-on with this recipe -- and most of that was spooning the batter into the mini muffin tins! Not having to cook meat is a real time-saver! You can choose to make bigger muffins and it would take less time. But I chose to follow the recipe and make the mini-muffins. Just because, sometimes, mini muffins are fun!
I found this recipe on the awesome new THRIVE Life Recipe site, but I made a few change to accommodate what I had on-hand! Here's the recipe as I made it:
SAUSAGE CHEESE POPUMS
1 cup THRIVE Sausage Crumbles
1 cup hot water
1 cup THRIVE 10 Grain Pancake Mix
3 tablespoons THRIVE Butter Powder (plus 2 tablespoons water)
1 cup shredded Cheddar cheese
Preheat oven to 350 degrees. Put THRIVE Sausage Crumbles into a small mixing bowl. Add hot water, stir and let sit 10 minutes.
Put THRIVE 10 Grain Pancake Mix into medium mixing bowl. Add THRIVE Putter Powder plus 2 tablespoons water. Mix with your hands until crumbly. Add cheese to mixture and toss to coat.
Add the sausage AND the water to the pancake mixture and gently stir until moistened. Scoop into well-greased mini muffin pan that has been sprayed with Butter Spray. Bake 18-22 minutes until golden brown and done in the middle (mine took 17 minutes). Yield: about 28 mini muffins
I took these for lunch at a friend's house and we liked them. They were moist and delicious. And super easy!

Cooking with the Q-Pon!: 10 Grain Pancake Mix

THRIVE-Vamped Pancakes!
I mentioned the other day that we had brinner: breakfast for dinner :). As part of that meal, I made some THRIVE-Vamped Pancakes! It was super easy, and I loved that I was getting so much extra goodness in my meal.
So much so that I whipped up a batch of those last night to go with all of our leftovers. My nieces were over for dinner, so they got some extra whole grain too!
Here's what I did:
2 cups pancake mix (I used Krusteas because it's all-inclusive)
3 tablespoons THRIVE 9-Grain Cracked Cereal
1 1/2 cups water
Whisk all together and cook pancakes according to package directions (or according to how you usually make pancakes).
This was so easy to do, because all I did was add some pre-mixed grains to my pancake mix and make it a batter! Perfect for busy mornings too! And you end up getting hard red wheat, hard white wheat, barley, rye, oats, corn, millet, hulled buckwheat, and flax seed!

Bring On Brinner With THRIVE!
Because this month is back-to-school month for many people, THRIVE Life's specials are all about making breakfast easier, healthier, and still delicious!
But just because it's all about breakfast, doesn't mean it can't also be all about dinner! So tonight, my family ate Brinner (breakfast for dinner), courtesy of THRIVE!
I adapted this recipe for my Breakfast Casserole.
Here's the casserole getting ready to go in the oven!
And here it is, getting ready to be consumed :)!
And here's the recipe:
NILLA'S BREAKFAST CASSEROLE
1 cup THRIVE Potato Chunks
2 cups boiling water
1 cup THRIVE Sausage Crumbles
1 cup THRIVE Spinach
1/3 cup dehydrated onion*
1 1/4 cup water
1/3 cup red bell pepper, chopped*
salt and pepper*, to taste
6 eggs, beaten*
1 1/2 cups shredded Cheddar cheese*
Preheat oven to 350 degrees.
Place THRIVE Potato Chunks into 2 cups boiling water and allow to sit 10 to 15 minutes (while you work on everything else).
In a large bowl, combine THRIVE Sausage Crumbles, THRIVE Spinach, dehydrated onion, salt, and pepper. Add 1 1/4 cups water and stir to mix well. Allow to sit 3 to 5 minutes. Add red bell pepper and mix.
Drain potatoes and add to spinach and sausage mixture. Stir to combine. Add beaten eggs and stir until well combined. Pour into a greased 9x13 pan. Cover with foil and bake 30 minutes.
